Tomato rice using brown rice

Brown rice have always been my favourite due to its non-sticky nature and long grains. I keep on experimenting with them and try to cook something tasty and healthy on which I can binge without feeling guilty.



Tomato rice using brown rice

Ingredients:

  • 1 bowl Cooked brown rice.
  • 1 finely chopped tomato
  • 1 grated tomato
  • 1 finely chopped onion
  • 2-3 minced garlic pods
  • red chilly paste as per taste
  • #NamakSwadanusar
  • Juice of half lemon
  • Coriander leaves for garnishing
  • Oil

Method:

  1. Heat some oil in a pan.
  2. Sauté onions and garlic till onions turn translucent.
  3. Add grated chopped tomatoes and sauté till they are half cooked. Do not let them turn mushy.
  4. Add Grated tomato/tomato juice and salt. 
  5. Sauté for 3 minutes and add red chilly paste.
  6. Add cooked rice and mix well. Cook for 2 minutes and turn of the flame. Squeeze lemon juice and serve.
Serving suggestions: Garnish with chopped coriander leaves.
