Spring onions and tomato curry

As it is winter here, there are plenty of fresh spring onions and ripe red tomatoes you get at the market. Both the ingredients are full of minerals and anti oxidants. Try making this recipe for dinner when your family is craving for some piping hot "soul food" 

Spring onion and tomato curry


Ingredients: 

  • 5-6 garlic pods minced 
  • 1 tsp garlic chutney (using red chilly paste,) 
  • 3 spring onions (head + neck + greens) chopped 
  • 2 ripe tomatoes cubed 
  • Regular Gujarati spices 
  • Oil 

 Method: 


  1. In a thick bottomed pan, heat some oil and sauté cumin, mustard and minced garlic. Add a pinch of hing, turmeric and throw in the onions. Sauté for about 1 minute. 
  2. Add tomatoes and salt. Mix well. 
  3. Add a tsp of dhana jeeru (dhanya jeera) powder. 
  4. Add half cup water and the garlic chutney. Mix well and check there are no chutney lumps found. 
  5. Adjust red chilly powder as per your taste. 
  6. Add a spoon of sugar (optional) if tomatoes are too sour. 
  7. Simmer till tomatoes get mushy. 

Serving: Serve with Phulkas or Bhakhri.
