Maggi Lasagna

Lasagna is an Italian dish having equal number of lovers and haters as it contains lots of cheese which attracts lovers and lots of butter tossed veggies which can be a reason to hate this dish. Typical Lasagna consists of white sauce, red sauce, lasagna sheets, butter tossed vegetables and lots of cheese. So here comes my recipe where I have replaced the lasagna sheets with wheat tortillas and add an additional layer of Masala Maggi.

Key Appliances/Utensils used: Oven, Deep wok, deep baking Tray

Ingredients:
  • 1 double packet cooked Masala Maggi
  • 2 cups grated mozzarella cheese
  • Wheat tortillas:
    • 2 cups whole wheat flour
    • 1 cup plain flour (Maida)
    • 2 pinch salt
    • 1 tsp oil
    • water for kneading
  • Butter tossed vegetables:
    • 1 cup cubed green capsicums (bell pepper)
    • 1 cup cubed carrots
    • 1 cup cubed onions
    • 0.5 cups chopped French beans
    • 0.5 cups blanched peas
    • 0.5 cups blanched corn
    • 1 tbsp Amul butter.
    • 1 pinch freshly ground black pepper
    • Namakswadanusar
  • White Sauce:
    • 2 tbsp Amul Butter
    • 1.5 tbsp Plain flour (maida)
    • 3 cups full fat milk
    • 1 pinch salt
    • 1 pinch black pepper powder
    • 1 cup grated processed cheese 
    • 1.5 tbsp sugar
  • Red Sauce:
    • 6 large blanched and unskinned tomatoes 
    • 1 large finely chopped onion
    • 5 garlic cloves
    • 0.5 cup tomato ketchup
    • Namakswadanusar
    • 2 tsp Red Chilly flakes
    • 1 tsp Oregano/dried herbs
Method:
  1. Tortillas:
    1. knead a soft dough mixing all the ingredients mentioned above.
    2. Roll medium size rotis out of that dough and dry roast it over a skillet and then on direct flame (just as we do for rotis)
  2. Maggi:
    1. Cook Maggi as per instructions given, use less water.
  3. Butter tossed vegetables:
    1. Put butter in hot wok.
    2. Add all the veggies and sprinkle salt
    3. Toss it cook till they are 70% cooked.
  4. White sauce:
    1. Put butter in wok and heat till it melts.
    2. Lower the flame to medium and add plain floor.
    3. Cook it till it leaves sweet fragrance
    4. Add milk and whisk it. Lumps may form at this stage, blend it with blender or whisk it vigorously till it has an even smooth texture.
    5. Add grated cheese, sugar and salt.
    6. Once this sauce gets its right saucy consistency, turn of the stove and sprinkle pepper powder. 
  5. Red Sauce:
    1. Heat some oil in a wok
    2. Add finely chopped onions & garlic and sauté it to brown color.
    3. Add blanched tomatoes and sprinkle salt.
    4. Cover and cook till tomatoes get nearly pureed and oil starts oozing out.
    5. Add tomato ketchup & sugar and mix well.
    6. Sprinkle chilly flakes and oregano.
  6. Put oven for pre-heating at 180℃
  7. Assembly:
    • Layer everything as numbered below:
      1. Maggi
      2. Red sauce
      3. Tortilla (You can use 2 to cover it completely)
      4. White sauce
      5. Butter tossed vegetables
      6. Red sauce
      7. Tortilla
      8. White sauce
      9. Maggi
      10. Red sauce
      11. Grated mozzarella cheese (topmost layer)
  8. Place this baking tray in pre-heated oven. Bake for 40 minutes.
Serving suggestions: Serve it with toasts or garlic bread.
