A recipe which can be prepared in couple of minutes and you can have it guilt free without compromising your health. Oat meal is high in fibre and is considered to be whole food which would make you feel full for a longer time. Have it for dinner and you won't need to binge on unhealthy snacks late night.
Oats Mushroom Khichdi |
Ingredients:
- 1 cup Quick cooking oats | Oat meal (kellogs / saffola / etc.)
- 2 tsp olive oil OR 1 tsp ghee.
- 1 tsp cumin
- 1 tsp ginger garlic paste
- 1 green chilly finely chopped
- 1 small onion finely chopped
- 1 tomato pureed
- 1 small tomato finely chopped
- 7-8 Button mushrooms sliced OR
- Any other vegetables if your choice
Method:
- In a pressure cooker, heat olive oil or ghee as per your preference.
- Add cumin and let it splutter. Add ginger garlic paste, onions, green chillies and sauté till they turn golden, approximately 3 minutes.
- Add tomato puree and some water just to avoid sticking of tomato pulp at the bottom. Add a pinch of salt and sauté for 2 minutes.
- Add mushrooms or vegetables of your choice and sauté for half a minute. Add oats.
- Add 1.5 glass of water (0.5 inch above the mixture) and pressure cook for 3 whistles.
- Let the pressure escape on its own.
Serving: Garnish with finely chopped fresh coriander leaves.
