Pink Sauce Pasta

Many a times we get confused whether to go or white sauce pasta or red sauce pasta? We all love the cheesy creaminess of white sauce pasta but also love spiciness and chunkiness of herbs in red sauce pasta. Here I got a recipe from one of the blogs I follow on Instagram. The mixture of both the sauces creates an orange or pinkish color which give it the name "Pink sauce pasta". This can be made with penne o any of the shapes you like. So here it goes:

Ingredients:

  • Red sauce:
    • 6 large tomatoes, blanched (put tomatoes in boiling water for about 5 minutes)
    • 5 garlic pods, minced
    • 1 large onion, finely chopped
    • 1 tsp chilly flakes
    • 1 tsp dried oregano
    • 1 tbsp tomato ketchup

    • Black pepper powder as per taste
    • Oil
  • White sauce
    • 2 tbsp butter
    • 1 tbsp maida 
    • 4 cups milk

    • Black pepper powder as per taste
    • 1 cup processed cheese, grated
    • Sugar 1 tbsp
  • 1 bowl cooked pasta of any shape
  • 1 large onion, cubed
  • 5-6 garlic pods, minced
  • 1 large capsicum, cubed
  • 1 cup corn kernels, blanched
  • 1 cup green peas, blanched
  • Oil

Method:

  1. Red Sauce:
    1. De-skin the tomatoes. Puree 3 out of 6. Chop remaining ones.
    2. In a pan, heat up some oil and sauté minced garlic and onion till they golden brown.
    3. Add chopped blanched tomatoes. Sauté for 2 minutes and add the puree.
    4. Add #namakSwadanusar and let the sauce cook till tomatoes cook completely.
    5. Add tomato ketchup and cook for a minute.
    6. Add oregano, chilly flakes and pepper powder. 
    7. Turn off the flame and the sauce is ready.
  2. White sauce:
    1. Heat butter in a deep wok.
    2. Add all purpose flour (maida) and sauté it till you get the fragrance. (Do not let it turn brown)
    3. Add milk little by little so no lumps are formed. 
    4. Add sugar.
    5. Add grated cheese top it and heat the sauce on medium flame till it reaches thick consistency. 
    6. Add #namakSwadanusar and black pepper powder. Turn off the flame and the sauce is ready. 
  3. Heat some oil in a deep wok, sauté garlic, onions and capsicum. 
  4. Add corns and peas. Sauté for 3 minutes. 
  5. Add both the sauces and mix well. 
  6. Add cooked pasta to it and again mix well. Cook for 5 minutes and turn of the stove. Keep it covered for 10 minutes.
Serving suggestions: Serve it hot with garlic breads.
