Paneer Fried Rice

It has been more than a decade and still, Indo-Chinese food has been trending. Many of us has this misconception of "Chinese food". But the fact is all the "Chinese" food that satisfied our taste buds fall under this "Indo-Chinese" cuisine. Below given is one such recipe which is loved by everyone ad every age groups. Paneer Fried Rice:


Key utensils/appliances used: large wok with handle (thrice the size of your rice quantity)

Ingredients:

  • 2 big bowls Steamed long grain basmati rice. (steamed before 5 hours)
  • 50 gm paneer (diced and deep fried)
  • 1 large finely chopped onion
  • 2 tsp minced garlic
  • 1 tsp minced ginger
  • 2 thin green chillies (very spicy ones) (surti marchi)
  • 0.5 cup chopped french beans
  • 0.5 cup finely chopped cabbage
  • 0.5 cup finely chopped carrot
  • 1 tsp soy sauce
  • 1 tsp green chilly sauce
  • 1 tsp red chilly sauce
  • 1 tsp pepper powder
  • Namakswadanusar
  • 1 tbsp oil
  • 0.5 tsp MSG (optional)
  • Spring onion greens (for garnishing)


Method:
Note: Stove should be on highest flame

  1. Heat a wok and pour oil into it.
  2. Once the oil is hot, add onions and saute.
  3. Once onions are sauted, add sliced green chillies and minced ginger-garlic.
  4. Saute till it leaves cooked fragrance. (till now your neighbours should come to know you are preparing some delicious Chinese food 😄)
  5. Add all the three vegetables along with paneer and stir fry it.
  6. Sprinkle salt and MSG to accelerate the cooking process.
  7. Do not let the vegetables cook completely. Add rice to it.
  8. Add all the sauces and toss your wok if you are good at it. Otherwise you can just mix it with spatula without applying any pressure.
  9. Sprinkle pepper powder and toss it again. 
Serving suggestions: Garnish it with spring onion greens and serve hot accompanied with hot and sour soup.
