Vermicelli Upma

Vermicelli / sevai is made from semolina a.k.a. rava/sooji which is a good source of carbohydrates. Vermicelli Upma is popular in south Indian houses. It is easy and quick to make. If you are looking for some quick lunch box recipes then this could be one of the easiest and healthiest Indian recipe.




Ingredients:


  • 1 cup vermicelli
  • 1 cup of chopped mixed vegetables of your choice (carrots, capsicum, french beans, peas etc.)
  • 1 green chilly
  • 1/2 tsp finely chopped ginger
  • 1 tsp Urad dal
  • 6-7 peanuts
  • 2-3 curry leaves
  • 1 dry red chilly
  • 1/2 tsp mustard seeds
  • Turmeric powder

Method:


  1. In a pan, dry roast the vermicelli till it start changing its color.
  2. Heat some water with a tsp of oil in a deep vessel.
  3. Add the roasted vermicelli to it and cook for not more than 2.5 minutes or until 95% cooked. 
  4. Rinse it under running water to cool it down.
  5. In a pan, heat some oil. Ones oil is heated, add ginger, urad dal, curry leaves, red chilly, split green chilly, mustard seeds and peanuts. Saute it on a low flame.
  6. Once urad dal starts changing its color, add a pinch of turmeric powder and add in the vegetables. 
  7. Add #NamakSwadanusar and mix well. You can cover and cook the vegetables to reduce the cooking time.
  8. Once vegetables are cooked, add the boiled vermicelli. Mix well and cook on medium flame for a minute.
