Minestrone soup is the name which you can find at bottom of soup list in local restaurant menus. Despite of its easy recipe, no local restaurants serve it and if they do, it is nowhere close to it. Ingredients:
- 1 bowl of mixed vegetables of your choice, peeled and cubed. Vegetables you can use: Potatoes, carrots, french beans, onions, spring onions, broccoli, zucchini, baby corns, mushrooms.
- 4-5 leaves spinach
- 1 cup of kidney beans (rajma) boiled
- 5 garlic cloves minced
- 4 tomatoes blanched and chopped
- 2 cups semi boiled pasta (90% boiled)
- 1 litre Vegetable stock/water
- Namak Swadanusar
- 1 tsp pepper powder
- 1 tbsp tomato ketchup
- 1 tbsp chilly sauce
- 1 tbsp oil

Method:
- Heat oil in a deep pan.
- Add onions, minced garlic and sauté for 3 minutes.
- Add one bowl of mixed vegetables. You can add or subtract vegetables as per availability.
- Add salt and sauté for 3 minutes and cover.
- Add blanched tomatoes, stir and cook covered for 5 minutes.
- Add vegetable stock/water and salt. Cover and cook for 30 minutes.
- Add pasta. Cover and cook for 10 minutes.
- Add pepper powder, ketchup, chilly sauce and salt (if needed)
Serving suggestions: Garnish with spring onion greens and grated cheese. Serve hot with cheese butter toasts.
